Vegetables and Dairy

  • 3 cups grated zucchini (adds moisture and nutrients)
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup shredded cheddar cheese (for gooey comfort)
  • ½ cup grated Parmesan cheese (adds a nutty flavor)
  • 1 tablespoon olive oil (for sautéing)
  • 2 tablespoons butter (enhances creaminess)
  • 1 teaspoon salt (essential seasoning)
  • ½ teaspoon black pepper (adds a gentle kick)
  • 1 teaspoon dried thyme (earthy aroma)
  • 1 teaspoon dried oregano (Mediterranean flavor)
  • ½ cup chicken broth or vegetable broth (keeps mixture moist)

Garnish

Instructions 

  • Cook rice in water until tender, then set aside.
  • Sauté onion and garlic in olive oil and butter until fragrant.
  • Mix cooked rice, zucchini, cheeses, broth, and seasonings; transfer to a casserole dish.
  • Bake at 375°F (190°C) for 20-25 minutes until bubbly and golden.
  • Garnish with chopped parsley before serving.

Notes

For a vegetarian version, use vegetable broth and omit the cheese or substitute with plant-based cheese.
