Ingredients

Vegetables

  • 2 medium zucchinis (sliced into ribbons)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil

Instructions 

  • Use a vegetable peeler to slice zucchinis into ribbons.
  • Whisk tahini, lemon juice, olive oil, salt, and pepper to make the dressing.
  • Combine zucchini ribbons, cherry tomatoes, red onion, and parsley in a bowl. Toss with dressing.
  • Transfer to a serving dish and garnish with extra parsley or sesame seeds.
