A moist and flavorful zucchini bread perfect for a quick snack or breakfast. Easy to make with simple ingredients and customizable with chocolate chips or nuts.

Ingredients

Dry ingredients

  • 1.75 cups all-purpose flour (spooned & leveled)
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg

Wet ingredients

  • 0.5 cup vegetable oil (or melted coconut oil)
  • 0.5 cup brown sugar (packed light or dark)
  • 0.5 cup granulated sugar
  • 2 large eggs (at room temperature)
  • 0.25 cup unsweetened applesauce (or sour cream or Greek yogurt)
  • 2 teaspoons vanilla extract

Main ingredient

  • 1.5 cups shredded zucchini (no need to blot)

Optional add-ins

  • 1 cup semi-sweet chocolate chips (or chopped nuts, raisins, etc)

Instructions 

  • Preheat oven to 350°F (177°C). Grease a 9x5-inch loaf pan.
  • Mix dry ingredients in a large bowl. Whisk wet ingredients in a separate bowl, then combine with zucchini. Gently stir until just combined. Fold in optional add-ins.
  • Pour batter into prepared pan. Bake for 55-70 minutes, covering halfway if needed. Check for doneness with a toothpick.
  • Cool in pan for 1 hour, then transfer to wire rack to cool completely before slicing.
  • Store leftovers at room temperature for 3-4 days or in the fridge for up to 1 week.

Notes

For neat slices, cool completely on a wire rack before slicing.
