1.75cupsall-purpose flour(spooned & leveled)
1teaspoonbaking powder
0.5teaspoonbaking soda
0.5teaspoonsalt
1.5teaspoonsground cinnamon
0.25teaspoonground nutmeg
Wet ingredients
0.5cupvegetable oil(or melted coconut oil)
0.5cupbrown sugar(packed light or dark)
0.5cupgranulated sugar
2largeeggs(at room temperature)
0.25cupunsweetened applesauce(or sour cream or Greek yogurt)
Preheat oven to 350°F (177°C). Grease a 9x5-inch loaf pan.
Mix dry ingredients in a large bowl. Whisk wet ingredients in a separate bowl, then combine with zucchini. Gently stir until just combined. Fold in optional add-ins.
Pour batter into prepared pan. Bake for 55-70 minutes, covering halfway if needed. Check for doneness with a toothpick.
Cool in pan for 1 hour, then transfer to wire rack to cool completely before slicing.
Store leftovers at room temperature for 3-4 days or in the fridge for up to 1 week.
