Ingredients

Cucumbers

  • 2 cups Cucumbers (Hot House or English, chopped)

Garlic

  • 1 clove Fresh Minced Garlic (or garlic powder in smaller amounts)

Lemon Juice

  • 3 tablespoons Lemon Juice (fresh is best)

Olive Oil

  • 2 tablespoons Extra Virgin Olive Oil (or light vegetable oil)

Dill

  • 1 tablespoon Dried Dill Weed (or fresh dill at a 1:1 ratio)

Salt

  • 1 teaspoon Salt (or kosher/sea salt)

Black Pepper

  • 1/2 teaspoon Ground Black Pepper (or white pepper)

Lemon Dill Marinade

  • Lemon Dill Marinade (A blend of the above ingredients)

Instructions 

  • Chop the cucumbers and place in a bowl.
  • Mix lemon juice, olive oil, minced garlic, dill, salt, and pepper to make the marinade.
  • Pour the marinade over the cucumbers and toss to combine.
  • Let sit for 10 minutes to allow flavors to meld.
  • Serve chilled as a refreshing summer side.

Notes

For extra flavor, add fresh dill just before serving.
