This quick and flavorful chicken pasta combines zesty lemon, garlic, and buttery goodness for a satisfying meal in just half an hour.

Ingredients

Pasta

  • 8 ounces fettuccine or spaghetti

Chicken

  • 2 pieces boneless, skinless chicken breasts

Dairy & Fats

  • 4 tablespoons unsalted butter (divided)
  • 4 cloves garlic (minced)

Produce

  • 1 piece lemon (juiced and zested)

Broth & Liquids

  • 1 cup chicken broth

Seasonings

  • to taste salt
  • to taste pepper

Herbs & Garnishes

  • 1/4 cup fresh parsley (chopped)

Optional

  • grated Parmesan cheese (for serving)

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain and reserve ½ cup of pasta water.
  • Season chicken with salt and pepper. Sear in 2 tbsp butter until golden, then rest and slice.
  • In the same pan, melt remaining butter, sauté garlic until fragrant, then add lemon juice and zest with broth. Simmer 2-3 minutes.
  • Add pasta to sauce, adjusting with reserved pasta water. Fold in sliced chicken, garnish with parsley and Parmesan if desired.

Notes

Use fresh parsley for best flavor and adjust seasoning as needed.
