Instructions
Preheat oven to 400°F (205°C) and line a sheet pan.
Toss figs with 1 tbsp olive oil, 1 tbsp honey, and a pinch of salt; roast cut-side up 12–15 minutes until jammy.
Whip ricotta, heavy cream, and 1/8 tsp salt until silky; fold in lemon zest if using.
Brush bread with remaining 1 tbsp olive oil; toast 5–7 minutes, flipping once.
Spread each toast with about 1/4 cup ricotta; top with roasted figs and pan juices.
Drizzle with remaining honey, scatter pistachios, and finish with flaky sea salt. Serve immediately.
Notes
For extra flavor, add lemon zest to the ricotta or drizzle with additional honey before serving.
