Ingredients

Vegetables

  • 1 small head green cabbage, finely chopped
  • 1 large cucumber, finely diced
  • 4 green onions green onions, thinly sliced

Herbs & Nuts

  • 1 cup fresh basil (packed)
  • 1 cup fresh spinach (packed)
  • 1/4 cup chives
  • 2 cloves garlic
  • Juice of 1 lemon lemon juice
  • 1/4 cup olive oil
  • 2 tablespoons rice vinegar
  • 3 tablespoons nutritional yeast
  • 1/4 cup walnuts
  • 1/2 teaspoon salt (or to taste)

Instructions 

  • Blend basil, spinach, chives, garlic, lemon juice, olive oil, rice vinegar, walnuts, nutritional yeast, and salt until smooth.
  • Combine chopped cabbage, cucumber, and green onions in a large bowl.
  • Pour dressing over veggies and toss to combine.
  • Adjust seasoning if needed and let sit for 10 minutes before serving.
