A rich and creamy vegan dessert combining peanut butter mousse with a decadent chocolate ganache, perfect for a dairy-free treat.

full fat coconut milk (tin)
(use the creamy part)
Instructions
Add the tofu, peanut butter, syrup, vanilla, and salt to a blender and blend until smooth.
Spoon into ramekins or jars and chill in the fridge.
Melt the chocolate and whisk in the coconut cream until smooth.
Pour the ganache over the mousse and refrigerate for 1 hour before serving.
Notes
Ensure the coconut milk is well chilled for best results in the ganache.
