A stunning and flavorful cake featuring caramelized figs atop a tender almond-flavored batter, perfect for special occasions or a luxurious treat.

Ingredients

Dried ingredients

  • 120 g all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon kosher salt
  • 100 g granulated sugar
  • 100 g light brown sugar
  • 2 teaspoons vanilla paste or extract
  • 3 large eggs (room temperature, whisked)
  • 100 g finely ground almond flour
  • 67 g brown sugar
  • 12 fresh figs stems removed and sliced in half

Instructions 

  • Preheat oven to 350°F/180°C. Grease and line a 9" cake pan with parchment.
  • Sprinkle brown sugar over the pan bottom, arrange fig halves on top.
  • Mix flour, baking powder, and salt. Cream butter and sugars, then add vanilla and eggs. Fold in dry ingredients and almond flour to form batter.
  • Pour batter over figs, spread evenly. Bake for 45-55 minutes until golden and a toothpick comes out clean.
  • Cool for 30 minutes, then invert onto a serving plate. Garnish with fresh figs and honey if desired.

Notes

Use ripe figs for best flavor and caramelization.
