A fresh and healthy turkey taco salad packed with flavorful ingredients and easy to prepare.
Ingredients

taco seasoning
Vegetables & Beans

chopped romaine lettuce

black beans
(drained and rinsed)

halved grape tomatoes

corn

cashews
(soaked in hot water for 30 minutes)

fresh cilantro

lime juice

chopped cilantro
Instructions
Cook the ground turkey in a non-stick pan until browned.
Add taco seasoning with 1/4 cup water, simmer for 10 minutes.
Blend dressing ingredients until smooth, adding water to desired consistency.
Combine lettuce, beans, tomatoes, corn, and cooked turkey in a large bowl.
Drizzle with dressing, toss, and top with avocado slices and cilantro.

Feel free to adjust the amount of dressing for your taste.
