A fresh and healthy turkey taco salad packed with flavorful ingredients and easy to prepare.

Ingredients

Meat

  • 1 pound ground turkey
  • 4 Tablespoons taco seasoning

Vegetables & Beans

  • 4 cups chopped romaine lettuce
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1 cup halved grape tomatoes
  • 1 cup corn
  • 3/4 cup cashews (soaked in hot water for 30 minutes)
  • 3/4 cup water

Herbs & Fruits

  • 1/2 cup fresh cilantro
  • 2 Tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 medium avocado (sliced)
  • 1/3 cup chopped cilantro

Instructions 

  • Cook the ground turkey in a non-stick pan until browned.
  • Add taco seasoning with 1/4 cup water, simmer for 10 minutes.
  • Blend dressing ingredients until smooth, adding water to desired consistency.
  • Combine lettuce, beans, tomatoes, corn, and cooked turkey in a large bowl.
  • Drizzle with dressing, toss, and top with avocado slices and cilantro.

Notes

Feel free to adjust the amount of dressing for your taste.
