A flavorful and healthy meal prep bowl featuring ground turkey, fresh vegetables, and tasty toppings, perfect for quick lunches or dinners.

Ingredients

Oil

  • 0.5 Tablespoon olive oil or avocado oil

Vegetables

  • 1 yellow onion yellow onion (diced)
  • 2 cloves garlic (minced)

Meat

  • 1 lb ground turkey

Spices & Seasonings

  • 1 Tablespoon chili powder
  • 1 teaspoon cumin
  • 0.25 teaspoon paprika
  • 0.25 teaspoon oregano
  • 1 teaspoon sea salt
  • 0.25 teaspoon black pepper

Sauce & Liquids

  • 8 ounces tomato sauce
  • 0.25 cup water

Dairy & Toppings

  • 4 ounces plain Greek yogurt (full fat or 2%)
  • 1 teaspoon lime juice
  • 0.167 teaspoon cumin
  • 0.25 teaspoon chili powder
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper

Additional Toppings

  • 0.25 cup fresh salsa
  • 2 Tablespoons fresh cilantro (chopped)

Other

  • 1 large head romaine lettuce (washed, rinsed, dried and chopped)
  • 1 15 oz can black beans (drained and rinsed)
  • 1 cup sweet corn (drained)
  • 1 cup grape or cherry tomatoes (chopped)
  • 0.5 cup shredded Mexican cheese
  • 1 avocado sliced

Garnish & Extras

  • chopped cilantro for garnish
  • to taste fresh salsa

Dressing

Instructions 

  • Blend all dressing ingredients until smooth; set aside.
  • Sauté onion and garlic in oil for 3-5 minutes.
  • Add ground turkey and cook until browned, then stir in spices and cook 1-2 minutes.
  • Pour in water and tomato sauce, simmer 5-7 minutes until liquid is absorbed.
  • Assemble bowls with cauliflower rice, lettuce, turkey, beans, corn, tomatoes, cheese, avocado, cilantro, salsa, and drizzle with dressing.
