Turkey Pumpkin Chili Recipe

A hearty and flavorful chili combining lean turkey and pumpkin for a comforting meal with a hint of spice.

Ingredients

Vegetables

  • 2 tbsp olive oil
  • 1 pasilla chili pepper diced pasilla chili pepper
  • 1 large red bell pepper (diced)
  • 1 medium red onion (diced)
  • 4 cloves garlic (minced)

Meat

  • 1 lb ground turkey (chicken or extra lean ground beef work too)

Spices & Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 tsp chili powder
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp oregano

Canned & Jarred Goods

  • 2/3 cup pumpkin purée
  • 1/2 cup tomato sauce
  • 3 tablespoons tomato paste
  • 1 14.5 oz can petite diced tomatoes (fire-roasted)
  • 4 cup low-sodium chicken stock (or vegetable broth)
  • 1 15 oz can great northern beans
  • 1 15 oz can black beans
  • 1/2 15 oz can dark red kidney beans

Instructions 

  • Heat olive oil in a large pot, cook peppers and onion until tender, then add garlic and cook until fragrant.
  • Add ground turkey and cook until browned, then stir in spices and cook for 2 minutes.
  • Mix in pumpkin purée, tomato sauce, tomato paste, and diced tomatoes; cook for 2 minutes.
  • Pour in chicken stock, add beans, bring to simmer, then cook on low for 1 hour.
  • Remove from heat and serve with desired toppings.

Notes

For extra flavor, top with fresh cilantro or a squeeze of lime.
