Instructions
Puree onion, egg, salt, and pepper; mix with ground turkey. Form golf-sized meatballs.
Fry meatballs in oil until browned; set aside.
Sauté carrots and celery in oil, then add broth and bring to a boil.
Add potatoes, meatballs, pasta, bay leaves, salt, and pepper; cook for 12 minutes. Let sit covered for 10 minutes, then add parsley and serve.
