A hearty and flavorful turkey chili perfect for a quick weeknight dinner. Loaded with spices and vegetables, it's both satisfying and healthy.

Ingredients

Meat

  • 1 pound ground turkey
  • 1 small or ½ medium onion (diced, about 1 cup)
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ¾ teaspoon chili powder
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ¼-½ teaspoon cayenne pepper
  • 4 ounce diced green chilies
  • 28 ounce crushed tomatoes
  • 15 ounce black beans (or pinto or kidney beans)
  • 15 ounce corn (drained or frozen)
  • 1 cup chicken stock

Instructions 

  • Add ground turkey and onion to a pot; cook until turkey is almost cooked through and onion is translucent.
  • Stir in spices, then add chilies, tomatoes, beans, corn, and chicken stock. Bring to a boil.
  • Simmer uncovered until thickened and flavors meld, about 15-20 minutes. Adjust seasoning as desired.
  • Serve hot with chopped onions and cheese if desired.

Notes

For extra flavor, top with chopped onions and shredded cheese before serving.
