A hearty and nutritious salad combining roasted sweet potatoes, tender turkey, fresh greens, and a tangy vinaigrette for a satisfying meal.

Ingredients

Sweet Potatoes

  • 4 pieces sweet potatoes, peeled and cut into 1-inch chunks
  • 2.5 tbsp avocado oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 0.5 tsp pepper
  • 0.75 tsp paprika
  • 0.5 tsp fresh thyme, chopped

Dressing

  • 0.33 cup olive oil
  • 0.25 cup apple cider vinegar
  • 1 large garlic clove, minced
  • 1.5 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 0.25 tsp cinnamon
  • 1 pinch red pepper flakes

Salad Greens

  • 1.5 cups spring mix
  • 1 cup kale, chopped

Main Protein

  • 0.75 cup turkey breast, shredded

Fruits & Nuts

  • 0.5 apple cored and thinly sliced
  • 2.5 tbsp goat cheese
  • 3 tbsp cranberries (dried)
  • 2 tbsp apple cider vinaigrette
  • 1.5 tbsp walnuts, toasted and roughly chopped

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with oil, salt, garlic powder, pepper, paprika, and thyme; roast for 30 minutes, stirring halfway.
  • Blend olive oil, vinegar, garlic, maple syrup, mustard, cinnamon, and red pepper flakes until emulsified.
  • Combine greens, shredded turkey, apple slices, cranberries, and toasted walnuts in a large bowl.
  • Add roasted sweet potatoes to the salad, drizzle with vinaigrette, and toss gently. Top with crumbled goat cheese before serving.

Notes

For extra flavor, toast the walnuts just before adding to the salad.
