Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes with oil, salt, garlic powder, pepper, paprika, and thyme; roast for 30 minutes, stirring halfway.
Blend olive oil, vinegar, garlic, maple syrup, mustard, cinnamon, and red pepper flakes until emulsified.
Combine greens, shredded turkey, apple slices, cranberries, and toasted walnuts in a large bowl.
Add roasted sweet potatoes to the salad, drizzle with vinaigrette, and toss gently. Top with crumbled goat cheese before serving.
Notes
For extra flavor, toast the walnuts just before adding to the salad.
