A refreshing and nutritious salad featuring a mix of three beans, perfect for any occasion.

Ingredients

Beans

  • 1 can kidney beans, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 2 cups fresh green beans, cut into 1-inch pieces
  • ¼ cup red onion, very thinly sliced
  • 2 tablespoons chopped parsley
  • cup apple cider vinegar
  • 3 tablespoons granulated sugar
  • ¼ cup olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper

Instructions 

  • Blanch green beans for 3 minutes, then cool in ice water.
  • Combine kidney beans, garbanzo beans, and cooled green beans in a bowl.
  • Add red onion and parsley to the bean mixture.
  • Whisk vinegar, sugar, olive oil, salt, and pepper in a separate bowl.
  • Pour dressing over beans and toss gently to coat.
  • Let salad sit for at least 30 minutes before serving.
