Ingredients

Canned Goods

  • 1 can chickpeas (15 ounces, drained and rinsed)
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground cumin
  • to taste Kosher salt and black pepper (for seasoning)

Fresh Produce

  • 4 cups curly kale (sliced)
  • 2 cups romaine lettuce (sliced)
  • ½ cup diced avocado (about 1–2 avocados)
  • ¼ cup red onion (finely diced)
  • ¼ cup chopped walnuts

Dressing

  • homemade Caesar dressing (blend all dressing ingredients)

Optional Toppings

  • shredded Parmesan cheese (for serving)

Instructions 

  • Preheat oven to 425°F (220°C). Roast chickpeas on a prepared baking sheet for 20 minutes, then cool.
  • Mix kale and romaine, drizzle with olive oil, and massage for one minute. Add diced avocado, red onion, and walnuts.
  • Blend dressing ingredients until creamy. Toss salad with dressing and roasted chickpeas.
  • Garnish with Parmesan cheese if desired. Serve chilled or at room temperature.

Notes

For extra crunch, ensure chickpeas are roasted until crispy. Adjust seasoning to taste.
