Ingredients

Vegetables

  • 6 cups chopped romaine lettuce

Protein

  • 2 small boneless skinless chicken breasts chicken breasts

Fruits

  • 1 cup strawberries
  • 1 gala apple apple

Dried Fruit

  • 1/3 cup craisins (dried cranberries)

Cheese

  • 1/2 cup shredded mozzarella cheese

Nuts

  • 3 tablespoons crushed walnuts

Dressing

  • to taste Olive oil, salt, and pepper
  • to serve Creamy poppyseed dressing or raspberry vinaigrette

Instructions 

  • Divide chopped romaine into two bowls and refrigerate.
  • Season chicken with olive oil, salt, and pepper; grill until cooked through. Rest and slice.
  • Slice strawberries and apple; divide among bowls.
  • Top salads with sliced chicken, craisins, mozzarella, and walnuts.
