Instructions
Melt butter in a pot over medium heat. Cook diced onion 4-5 mins until translucent, then add garlic and cook 30 sec.
Stir in flour and cook 1 min. Gradually add broth, milk, and cream, stirring until smooth.
Add Dijon mustard, smoked paprika, nutmeg, salt, and pepper. Stir to combine.
Add broccoli and grated carrot. Simmer 15-20 mins until tender and thickened. Blend half the soup until smooth.
Remove from heat, stir in shredded cheddar until melted. Taste and adjust seasoning. Serve hot.
Notes
For a creamier texture, blend more of the soup. Feel free to add a squeeze of lemon for brightness.
