Ingredients

Butter

  • 4 tablespoons unsalted butter

Vegetables

  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1/4 cup all-purpose flour

Broth and Dairy

  • 2 cups chicken broth (or vegetable broth)
  • 2 cups whole milk
  • 1 cup heavy cream

Flavorings and Spices

  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon nutmeg

Vegetables

  • 4 cups broccoli florets (roughly chopped (about 2 medium heads))
  • 1 medium carrot (peeled and grated or finely diced)

Cheese

  • 2.5 cups sharp cheddar cheese (freshly shredded)

Optional toppings

  • to taste extra shredded cheddar
  • to serve croutons or crusty bread (on the side (optional))

Instructions 

  • Melt butter in a pot over medium heat. Cook diced onion 4-5 mins until translucent, then add garlic and cook 30 sec.
  • Stir in flour and cook 1 min. Gradually add broth, milk, and cream, stirring until smooth.
  • Add Dijon mustard, smoked paprika, nutmeg, salt, and pepper. Stir to combine.
  • Add broccoli and grated carrot. Simmer 15-20 mins until tender and thickened. Blend half the soup until smooth.
  • Remove from heat, stir in shredded cheddar until melted. Taste and adjust seasoning. Serve hot.

Notes

For a creamier texture, blend more of the soup. Feel free to add a squeeze of lemon for brightness.
