A fresh and vibrant avocado salad perfect for a quick, healthy meal or side dish.

Ingredients

Produce

  • 2 medium avocados (about 2 cups cubed)
  • 2 cups cucumber (about 1 large cucumber (300g))
  • 3 tablespoons fresh lime juice (from 1 to 2 limes)
  • 2 tablespoons extra-virgin olive oil
  • 1 small jalapeño (seeds and membrane removed)
  • 1 small garlic clove (omit if sensitive to raw garlic)
  • 0.25 teaspoon fine sea salt (or more to taste)
  • 0.5 cup chopped fresh herbs (cilantro, parsley, basil, dill, or a combination)

Optional

  • to taste hot sauce

Instructions 

  • Whisk lime juice, olive oil, minced garlic, jalapeño, and salt in a large bowl. Stir in herbs.
  • Cut avocados in half, remove pits, and cube. Add to bowl with cucumber.
  • Gently toss salad until evenly coated. Taste and adjust seasoning, add hot sauce if desired.

Notes

Use ripe avocados for best flavor and texture.
