  • 307 g water
  • 450 g bread flour
  • 10 g salt
  • 1 medium apple apple (or half a large one)
  • 1 tablespoon ground cinnamon

Instructions 

  • Mix the active starter, water, and flour until well combined and let it ferment for 8-12 hours.
  • Dice the apple and mix it with cinnamon.
  • Incorporate the apple mixture into the fermented dough and knead until smooth.
  • Shape the dough and let it proof for 1-2 hours.
  • Bake at 220°C (430°F) for 40-45 minutes until golden brown.
