Shrimp

medium shrimp, peeled and deveined
Seasoning

Kosher salt and freshly ground black pepper
Butter

Vegetables

Instructions
Cook rice according to package instructions and set aside.
Season shrimp with salt and pepper. Melt butter and cook shrimp 2–3 minutes until pink; remove and set aside.
Sauté onion and bell pepper until tender. Add curry paste, garlic, and ginger; cook until fragrant.
Add coconut milk and broth; simmer 8–10 minutes. Stir in rice, shrimp, lime juice, and cilantro; heat through.
Notes
Use fresh cilantro for best flavor. Adjust seasoning to taste.
