A fresh and tangy Thai Mango Salad combines ripe mangoes with crunchy vegetables and a flavorful dressing for a delightful appetizer or light meal.

Ingredients

  • 2 pieces ripe mangoes, peeled and julienned
  • 1 cup shredded carrots
  • 1 red bell pepper red bell pepper, thinly sliced
  • 1 piece cucumber, julienned
  • 0.25 cup fresh cilantro, chopped
  • 0.25 cup roasted peanuts, crushed
  • 2 tablespoons sesame oil
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce (or fish sauce)
  • 1 tablespoon honey or agave syrup
  • 1 red chili finely chopped (optional for heat)

Instructions 

  • Combine mangoes, carrots, bell pepper, and cucumber in a large bowl.
  • Whisk together sesame oil, lime juice, soy sauce, honey, and chili to make the dressing.
  • Pour dressing over the salad and toss gently.
  • Add cilantro and peanuts on top before serving.

Notes

For extra flavor, let the salad rest for 10 minutes before serving.
