A vibrant and crunchy slaw tossed in a tangy peanut lime dressing, perfect for a fresh and flavorful meal or side.

Ingredients

Vegetables

  • 3 cups shredded green cabbage
  • 1 cup shredded purple cabbage (optional, for color)
  • 1.5 cups shredded carrots
  • 3 scallions thinly sliced scallions
  • 0.25 cup chopped fresh cilantro (or mint)
  • 0.25 cup chopped peanuts (for garnish)
  • 0.5 red bell pepper thinly sliced red bell pepper (optional)
  • 3 tbsp creamy peanut butter
  • 2 tbsp fresh lime juice (1 lime)
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce (or tamari)
  • 1 tbsp maple syrup or honey
  • 1 tsp toasted sesame oil
  • 0.5 tsp fresh grated ginger
  • 1 clove garlic, minced
  • 1-2 tbsp water to thin, as needed

Optional

  • pinch red pepper flakes or sriracha for heat

Instructions 

  • Whisk together peanut butter, lime juice, vinegar, soy sauce, maple syrup, sesame oil, ginger, garlic, and water until smooth.
  • Combine cabbage, carrots, scallions, bell pepper (if using), and cilantro in a large bowl.
  • Pour dressing over the slaw and toss to coat. Top with chopped peanuts before serving.
  • Serve immediately or chill for 15–30 minutes. Store leftovers in the fridge for up to 3 days.

Notes

Adjust lime and chili to taste for more tang or heat.
