Instructions
Whisk together peanut butter, lime juice, vinegar, soy sauce, maple syrup, sesame oil, ginger, garlic, and water until smooth.
Combine cabbage, carrots, scallions, bell pepper (if using), and cilantro in a large bowl.
Pour dressing over the slaw and toss to coat. Top with chopped peanuts before serving.
Serve immediately or chill for 15–30 minutes. Store leftovers in the fridge for up to 3 days.
Notes
Adjust lime and chili to taste for more tang or heat.
