Ingredients

Protein

  • 1 piece Pre Top Sirloin, sliced very thin

Oil

  • 1 tbsp grapeseed oil

Herbs & Spices

  • 6 leaves basil leaves

Canned Goods

  • 1 can full-fat coconut milk
  • 2 tbsp Red curry paste

Fresh Produce

  • 1 inch ginger
  • 1 piece lime, juiced
  • 1 piece onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 clove garlic, minced

Broth

  • 1/2 cup broth

Instructions 

  • Heat oil in a skillet over medium-high heat. Sauté onion until translucent, then add red pepper, ginger, and garlic; cook until softened.
  • Add curry paste and salt; stir to combine. Pour in broth and simmer, scraping up bits.
  • Stir in basil leaves, lime juice, and coconut milk; bring to a boil, then simmer for 5 minutes.
  • Add steak slices and cook until just done. Season with salt and pepper.
  • Remove from heat and serve with rice or greens. Enjoy!

Notes

Use thinly sliced sirloin for quick cooking and tender results.
