Delicious and fresh Thai basil beef rolls are perfect for a light appetizer or snack, combining savory beef with crisp vegetables and fragrant herbs.
Ingredients
Meat and Vegetables
1
lb
lean ground beef (93/7 ratio works best)
1
tablespoon
soy sauce (low-sodium recommended)
1
tablespoon
hoisin sauce
1.5
cups
shredded carrots (julienned for easier rolling)
1
cup
chopped bell peppers (red or yellow for sweetness)
Herbs and Wraps
1
bunch
fresh Thai basil leaves (regular basil works if needed)
16
pieces
rice paper wrappers (8-inch round, buy extra as they tear easily)
to taste
warm water (100-110°F for softening rice paper)
Instructions
Cook ground beef in a skillet over medium-high heat for 5-6 minutes until browned; drain excess fat and stir in soy and hoisin sauces.
Add shredded carrots and chopped bell peppers; cook 2-3 minutes until tender, then cool for 8-10 minutes.
Dip rice paper in warm water for 10-30 seconds until pliable, then lay flat on a damp towel.
Place 3-4 basil leaves in the center, add 3-4 tablespoons of beef mixture, fold bottom, sides, then roll tightly.
Repeat with remaining wrappers and filling. Serve immediately or within 2-3 hours with dipping sauce.
Notes
Ensure not to overfill the rice paper to prevent tearing.
