Instructions
Season beef with salt and pepper, then sear in hot oil until golden. Remove and set aside.
Sauté onions, peppers, and garlic until translucent. Add tomatoes, beans, chilis, stock, and spices; return beef to the pot.
Simmer covered for 2 hours until beef is tender. Remove bay leaf, stir in lime juice and cilantro, then serve with toppings.
Notes
For extra flavor, let the chili rest for 30 minutes before serving to allow flavors to meld.
