Ingredients

  • 2 tablespoons olive oil
  • 1 pound lean ground beef
  • 1 diced onion (diced)
  • 1 seeded and diced red bell pepper
  • 1 seeded and diced green bell pepper
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • 1 ½ cups beef broth
  • 1/2 cup white rice
  • 1 14 ounce can diced tomatoes
  • 1 14 ounce can black beans (strained and rinsed)
  • 1 cup frozen corn
  • 1 cup shredded cheese (such as Havarti or Monterey Jack)

Fresh cilantro

  • to taste chopped fresh cilantro

Tortilla chips

  • to serve lime wedges

Instructions 

  • Preheat oven to 400°F (200°C).
  • Cook ground beef in a skillet until no longer pink, then add vegetables and cook until tender.
  • Add spices, stir, then pour in broth, add rice, tomatoes, beans, and corn. Simmer until rice is tender and liquid is absorbed.
  • Top with shredded cheese, then bake in oven for 5 minutes until cheese melts.
  • Garnish with cilantro and serve with tortilla chips and lime wedges.

Notes

Adjust seasoning to taste and serve with your favorite toppings.
