Instructions
Preheat oven to 400°F (200°C).
Cook ground beef in a skillet until no longer pink, then add vegetables and cook until tender.
Add spices, stir, then pour in broth, add rice, tomatoes, beans, and corn. Simmer until rice is tender and liquid is absorbed.
Top with shredded cheese, then bake in oven for 5 minutes until cheese melts.
Garnish with cilantro and serve with tortilla chips and lime wedges.
