A delicious and healthy bowl featuring perfectly seared salmon glazed with homemade teriyaki sauce, served over rice with fresh vegetables and flavorful toppings.

Ingredients

Salmon

  • 4 fillets salmon fillets (about 6oz each)
  • 1 tablespoon vegetable oil
  • Salt and pepper Salt and pepper (to taste)

Teriyaki Sauce

  • 1/4 cup soy sauce
  • 2 tablespoons mirin (or rice vinegar + 1 tsp sugar)
  • 2 tablespoons honey
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon cornstarch + 1 tablespoon water (for slurry)

Base

  • Steamed jasmine or sushi rice Steamed jasmine or sushi rice

Toppings

  • 1 piece avocado, sliced
  • 1 cup edamame, shelled
  • 1 piece cucumber, sliced or ribboned
  • to taste Pickled ginger
  • for garnish Sesame seeds
  • Sriracha mayo (mayo + sriracha, mixed) Sriracha mayo

Instructions 

  • Combine soy sauce, mirin, honey, garlic, and ginger in a saucepan. Simmer, add slurry, and thicken into a glaze.
  • Season salmon with salt and pepper. Sear skin-side up in oil for 3-4 minutes, flip, brush with sauce, and cook until just done.
  • Assemble bowls with rice, salmon, avocado, edamame, cucumber, ginger, drizzle sriracha mayo, and sprinkle sesame seeds.

Notes

Feel free to customize toppings and spice level to taste.
