Enjoy flavorful homemade teriyaki chicken served over rice with vegetables and garnished with sesame seeds and green onions.

Ingredients

Protein

  • 1.5 pounds boneless, skinless chicken thighs

Sauce

  • 1/3 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 2 tablespoons cornstarch + water slurry

Base

  • 2 cups steamed rice
  • 2 cups chopped vegetables (broccoli, bell peppers, carrots)

Cooking Oil

  • 2 tablespoons vegetable oil

Garnish

  • 1 tablespoon toasted sesame seeds
  • 2 green onions sliced

Instructions 

  • Whisk soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, garlic, and ginger to make the sauce.
  • Cut chicken into bite-sized pieces and cook in oil until browned, about 6-8 minutes.
  • Steam vegetables until tender and set aside.
  • Add cooked chicken to the sauce, then stir in cornstarch slurry to thicken, about 2 minutes.
  • Sauté vegetables briefly in remaining oil, then assemble bowls with rice, chicken, vegetables, and garnish with sesame seeds and green onions.

Notes

For extra flavor, marinate the chicken in some of the sauce before cooking.
