A delicious and easy-to-make bowl combining tender chicken, sweet pineapple, and savory teriyaki sauce served over rice.
Ingredients
Protein

boneless, skinless chicken thighs
(cut into bite-sized pieces)

fresh pineapple chunks
(about 1 small pineapple)
Sauce
1/3
cup
soy sauce
(low-sodium preferred)
1/4
cup
honey

cloves
garlic
(minced)

tablespoon
fresh ginger
(minced)
Cooking

vegetable oil

cups
cooked rice
(jasmine or white rice)

tablespoons
green onions
(sliced, for garnish)

sesame seeds
(for garnish)
Instructions
Whisk soy sauce, honey, garlic, ginger, and water to make teriyaki sauce. Set aside.
Cook chicken in oil over medium-high heat until golden and cooked through, about 5-7 minutes per side. Remove and set aside.
Cook pineapple in the same skillet until caramelized, about 3-4 minutes.
Return chicken and pineapple to skillet, add sauce, and simmer until thickened, 2-3 minutes.
Serve over rice, garnished with green onions and sesame seeds.
Notes
For extra flavor, marinate the chicken in some of the sauce beforehand.
