Taco Pasta - (One Pot!)

A quick and cheesy one-pot taco pasta dish combining flavorful beef, cheeses, and pasta for a satisfying meal.

Ingredients

Cheese

  • 1 cup Cheddar cheese (shredded)
  • 1 cup Monterey Jack Cheese (shredded)
  • 4 oz Velveeta cheese (cut into cubes) (or ¾ cup shredded cheese)

Ground Beef

  • 1 lb Ground Beef (85% lean)

Other ingredients

  • 1 Tbsp Butter
  • 2 cloves Garlic (minced)
  • 1 oz packet Taco Seasoning
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp Tomato paste
  • 1 cup Beef broth
  • 1 cup Chicken broth
  • 1 cup Whole milk (at room temp)
  • 10 oz can Rotel Tomatoes with green chilies (undrained)
  • 0.5 lb Medium pasta shells (see notes)

Instructions 

  • Shred cheeses and set aside at room temperature.
  • Cook and crumble ground beef; drain excess grease.
  • Melt butter, add garlic, and cook 1 minute.
  • Add remaining ingredients except cheese and pasta; bring to a boil. Add pasta, cover, and cook until tender. Stir halfway.
  • Reduce heat, stir in cheese until melted. Serve once desired consistency is reached.

Notes

Ensure cheese is near room temperature for smooth melting.
