A flavorful and easy Korean-inspired beef bowl with pickled vegetables and fresh toppings.

Ingredients

Meat

  • 4 lbs 93% lean ground beef
  • 2 cups chopped green onions
  • 1 cup coconut aminos
  • 4 tbsp brown sugar alternative (like monk fruit sweetener)
  • 6 tbsp rice vinegar (for cooking and pickling)
  • 2 tbsp minced garlic
  • 4 tsp minced ginger
  • 2 tbsp toasted sesame oil
  • 2 tsp ground black pepper
  • 1 tsp red pepper flakes
  • 1 tsp salt (or to taste)
  • 3 cups sliced carrots
  • 3 cups sliced cucumber
  • 3 cups sliced radishes
  • 6 tbsp rice vinegar (for pickling)
  • 4 tbsp water (for pickling)
  • 4 tsp sugar (for pickling)
  • 1 tsp salt (for pickling)

Instructions 

  • Mix rice vinegar, water, sugar, and salt; add sliced veggies and refrigerate for 30 minutes.
  • Cook ground beef until browned; drain excess fat.
  • Add green onions, garlic, and ginger; cook until fragrant.
  • Stir in coconut aminos, rice vinegar, sweetener, sesame oil, pepper, flakes, and salt; simmer 10-12 minutes.
  • Serve beef over jasmine rice, top with pickled veggies, and garnish with sesame seeds and green onions.

Notes

Use a monk fruit sweetener for a lower sugar option and adjust salt to taste.
