Add garlic, diced bell pepper, cumin, and cook for 2 minutes until fragrant.
Stir in chopped sweet potatoes, diced tomatoes, drained kidney beans, vegetable broth, chili powder, chipotle or smoked paprika, salt, and black pepper. Simmer for 30-40 minutes until sweet potatoes are tender and sauce thickens.
Taste and adjust seasonings, then serve over rice, pasta, or quinoa, topped with lime wedges and optional garnishes.
