A hearty and flavorful vegetarian chili featuring sweet potatoes, beans, and spices, perfect for a comforting meal.

Ingredients

Oil

  • 3 tablespoons olive oil

Vegetables

  • 1 large onion (chopped)
  • 1 large carrot (chopped)
  • 1 stalk celery (chopped)

Garlic

  • 4 cloves garlic (grated)

Spices

  • 1.5 teaspoons cumin
  • 1 large green bell pepper (diced)
  • 1.5 pounds sweet potatoes (peeled and cut into 1 inch dice)

Canned Goods

  • 3 cans diced tomatoes (15-ounce each)
  • 3 cans kidney beans (15-ounce each)

Liquids

  • 2 cups vegetable broth
  • 1 teaspoon chili powder (more or less to taste)
  • 1 teaspoon chipotle powder or smoked paprika (optional for smoky flavor)
  • 1.5 teaspoons salt (or more to taste)
  • 0.125 teaspoon black pepper

Servings & Toppings

  • 4-6 portions rice, pasta, or quinoa
  • 4-6 wedges lime (for topping)

Instructions 

  • Heat olive oil and sauté chopped onion, carrot, and celery for 5 minutes, stirring often.
  • Add garlic, diced bell pepper, cumin, and cook for 2 minutes until fragrant.
  • Stir in chopped sweet potatoes, diced tomatoes, drained kidney beans, vegetable broth, chili powder, chipotle or smoked paprika, salt, and black pepper. Simmer for 30-40 minutes until sweet potatoes are tender and sauce thickens.
  • Taste and adjust seasonings, then serve over rice, pasta, or quinoa, topped with lime wedges and optional garnishes.

Notes

For extra smoky flavor, add more chipotle powder or smoked paprika.
