Ingredients

Sweet Potatoes

  • 3 lbs sweet potatoes (peeled and diced)

Brown Sugar

  • 0.5 cup brown sugar

Pecans

  • 1 cup pecans (chopped and toasted)

Eggs

  • 2 large eggs (lightly beaten)

Milk

  • 0.5 cup milk (room temperature)

Unsalted Butter

  • 0.25 cup unsalted butter (melted)

Vanilla Extract

  • 1 teaspoon vanilla extract

Cinnamon

  • 1 teaspoon cinnamon

Nutmeg

  • 1 teaspoon nutmeg

Salt

  • 0.5 teaspoon salt

All-purpose Flour

  • 1 cup all-purpose flour

Brown Sugar (for topping)

  • 1 cup packed brown sugar

Pecans (toasted and chopped)

  • 1 cup pecans (toasted and chopped)

  • 2 tablespoons all-purpose flour

  • 2 tablespoons brown sugar

Unsalted Butter (for topping)

  • 0.25 cup unsalted butter (melted)

Mini Marshmallows

  • 1.5 cups mini marshmallows

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • Roast 2 cups of pecans on a baking sheet until lightly toasted, then cool and roughly chop.
  • Mix sweet potatoes with eggs, milk, melted butter, vanilla, cinnamon, nutmeg, and salt. Transfer to prepared dish.
  • Combine flour and brown sugar for topping, cut in melted butter, then stir in toasted pecans. Sprinkle over casserole.
  • Bake for 45 minutes, then top with mini marshmallows and bake an additional 10 minutes until golden.

Notes

For extra flavor, toast pecans before adding to the topping.
