Delicious and easy-to-make rice noodles tossed in a sweet chili garlic sauce, perfect for a quick and flavorful meal.

Ingredients

Noodles

  • 8 oz oz rice noodles
  • 3 tablespoons tablespoons sweet chili sauce
  • 2 tablespoons tablespoons soy sauce
  • 1 tablespoon tablespoon sesame oil
  • 4 cloves cloves garlic, minced
  • 1 tablespoon tablespoon fresh ginger, grated
  • 1 red bell pepper red bell pepper, thinly sliced
  • 1 cup cup snap peas, trimmed
  • 2 green onions green onions, chopped
  • 1 tablespoon tablespoon sesame seeds (for garnish)
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions 

  • Boil water and cook rice noodles according to package, then drain and rinse.
  • Heat sesame oil, sauté garlic and ginger for 1 minute.
  • Add bell pepper and snap peas; stir-fry 3-4 minutes.
  • Stir in sweet chili and soy sauces, then add noodles and toss to coat. Remove from heat.
  • Mix in chopped green onions, garnish with sesame seeds, cilantro, and serve with lime wedges.

Notes

Adjust the spice level with more or less chili sauce as desired.
