Instructions
Cook jasmine rice with water and a pinch of salt, then fluff and set aside.
Mix rice vinegar, sugar, and salt; toss cucumber slices and set aside.
Whisk sesame oil, rice vinegar, soy sauce, and honey; toss with cabbage, carrot, and sesame seeds. Chill.
Cook chicken thighs in oil until golden, then add sauce mixture and simmer until coated and cooked through.
Assemble bowls with rice, slaw, chicken, and cucumber slices. Garnish and serve.
Notes
Adjust spice levels with extra chili sauce if desired.
