A flavorful and colorful bowl combining tender chicken, jasmine rice, crunchy slaw, and quick-pickled cucumbers for a satisfying meal.

Ingredients

Sweet Chili Chicken

  • 1 lb chicken thighs, boneless and skinless
  • 0.5 cup sweet chili sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced

Rice

  • 1 cup jasmine rice
  • 1.5 cups water
  • Pinch salt

Sesame Slaw

  • 2 cups shredded cabbage (green or red)
  • 1 large carrot, julienned
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp soy sauce
  • 1 tsp honey
  • 1 tbsp sesame seeds

Quick Pickled Cucumber

  • 1 cucumber cucumber, thinly sliced
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt

Instructions 

  • Cook jasmine rice with water and a pinch of salt, then fluff and set aside.
  • Mix rice vinegar, sugar, and salt; toss cucumber slices and set aside.
  • Whisk sesame oil, rice vinegar, soy sauce, and honey; toss with cabbage, carrot, and sesame seeds. Chill.
  • Cook chicken thighs in oil until golden, then add sauce mixture and simmer until coated and cooked through.
  • Assemble bowls with rice, slaw, chicken, and cucumber slices. Garnish and serve.

Notes

Adjust spice levels with extra chili sauce if desired.
