Ingredients

Protein

  • 1 lb Chicken thighs (boneless, skinless) (Use for easier preparation)

Grains

  • 2 cups Rice (Jasmine or basmati)

Sauces and Condiments

  • 1/2 cup Sweet chili sauce (For coating the chicken)
  • 1 tbsp Soy sauce (Can substitute with tamari for gluten-free)

Aromatics

  • 2 cloves Garlic (minced)
  • 1 tbsp Ginger (grated)

Vegetables

  • 2 cups Vegetables (bell peppers and broccoli)

Garnishes

  • 2 tbsp Green onions (For garnish)
  • 1 tbsp Sesame seeds (Optional garnish)

Instructions 

  • Cook rice according to package instructions.
  • Cut chicken into bite-sized pieces and coat with sweet chili sauce.
  • Stir-fry chicken until cooked through, then add garlic, ginger, and vegetables. Cook until vegetables are tender.
  • Assemble bowls with rice, chicken and vegetables. Garnish with green onions and sesame seeds if desired.

Notes

For extra flavor, add a squeeze of lime or a drizzle of additional chili sauce.
