Ingredients

Salad Ingredients

  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced (any color)
  • 1/2 cup red onion thinly sliced
  • 1/2 cup shredded carrots
  • 1/4 cup sunflower seeds
  • 1/4 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • salt and pepper to taste

Instructions 

  • Combine salad greens, tomatoes, cucumber, bell pepper, onion, and carrots in a bowl.
  • Whisk olive oil, vinegar, honey, mustard, salt, and pepper in a small bowl.
  • Drizzle dressing over salad and toss to coat.
  • Top with sunflower seeds and feta cheese.
  • Serve immediately or chill for 15 minutes.
