Egg wash (1 egg yolk + 1 tsp milk) or milk wash and sanding sugar

Instructions
Prepare the dough by cutting cold butter into flour, then add vinegar and ice water to form a dough. Chill for 30 minutes.
Roll out the dough into a circle, place sliced peaches in the center, and fold edges over.
Mix peaches with sugar, lemon juice, vanilla, arrowroot, and spices; spread over dough.
Brush crust with egg or milk wash, add jelly if desired, and sprinkle sanding sugar.
Bake at 375°F (190°C) for 30 minutes until golden brown.
Notes
Use very cold butter for flaky crust and adjust water as needed to form dough.
