A delightful and rustic dessert featuring sweet peaches in a flaky crust, perfect for summer gatherings.

Ingredients

Dough

  • 1/2 cup very cold unsalted butter
  • 1-1/4 cups all-purpose flour (plus more for rolling)
  • 1/2 Tbsp organic cane sugar
  • 1/2 tsp fine grain sea salt
  • 1/2 Tbsp apple cider vinegar
  • 4-6 Tbsp ice water (adjust as needed)

Filling

  • 3 cups peaches, sliced (about 4 medium peaches)
  • 1/4 cup light brown sugar
  • juice of half a lemon lemon juice
  • 1 tsp pure vanilla extract
  • 1 Tbsp arrowroot starch
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground ginger

Optional toppings

  • 1 Tbsp apricot or peach jelly (optional)
  • Egg wash (1 egg yolk + 1 tsp milk) or milk wash and sanding sugar egg wash or milk wash and sanding sugar (optional)

Instructions 

  • Prepare the dough by cutting cold butter into flour, then add vinegar and ice water to form a dough. Chill for 30 minutes.
  • Roll out the dough into a circle, place sliced peaches in the center, and fold edges over.
  • Mix peaches with sugar, lemon juice, vanilla, arrowroot, and spices; spread over dough.
  • Brush crust with egg or milk wash, add jelly if desired, and sprinkle sanding sugar.
  • Bake at 375°F (190°C) for 30 minutes until golden brown.

Notes

Use very cold butter for flaky crust and adjust water as needed to form dough.
