Ingredients

Meat

  • 2 medium chicken breasts
  • 4 tablespoons BBQ sauce
  • 1 tablespoon honey
  • 1 pinch sea salt

Salad greens

  • 4 cups spinach leaves
  • ½ cup raspberries
  • ½ cup sliced radishes
  • ¼ cup mint leaves (lightly packed)
  • ¼ cup basil leaves (lightly packed)
  • 2 tablespoons slivered almonds
  • 2 tablespoons goat cheese
  • 2 handfuls cherry tomatoes
  • 1 cup fresh or frozen and thawed raspberries
  • 4 large basil leaves
  • 3 tablespoons honey
  • 3 tablespoons olive oil
  • 2 tablespoons cold water
  • 1 tablespoon apple cider vinegar

Instructions 

  • Preheat the grill to medium-high. Mix BBQ sauce, honey, and salt; marinate chicken and set aside.
  • Blend dressing ingredients until smooth, adding water if needed.
  • Assemble salad with greens, berries, radishes, herbs, and nuts.
  • Grill chicken for 6-8 minutes per side until cooked through. Rest for 5 minutes.
  • Slice chicken if desired, drizzle dressing over salad, and top with chicken before serving.

Notes

For extra flavor, marinate the chicken longer and add your favorite herbs.
