Instructions
Boil whole unpeeled potatoes in salted water until tender, then cool, peel, and chop into cubes.
Combine potatoes, red onion, parsley, pickles, olives, capers, and sun dried tomatoes in a bowl.
Drizzle with olive oil and balsamic vinegar, then add sumac, chili flakes, and salt. Toss gently to coat.
