A vibrant and tangy potato salad featuring sumac, perfect for a refreshing side dish or light meal.

Ingredients

Potatoes

  • 4-5 medium potatoes (Yukon gold or red)
  • 1 small red onion (thinly sliced)
  • ½ cup black olives (chopped)
  • 3 small pickles (chopped)
  • ¼ cup capers
  • cup chopped parsley
  • 5-6 sun dried tomatoes sun dried tomatoes (chopped)
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp sumac
  • ½ tsp chili flakes
  • to taste salt

Instructions 

  • Boil whole unpeeled potatoes in salted water until tender, then cool, peel, and chop into cubes.
  • Combine potatoes, red onion, parsley, pickles, olives, capers, and sun dried tomatoes in a bowl.
  • Drizzle with olive oil and balsamic vinegar, then add sumac, chili flakes, and salt. Toss gently to coat.
  • Adjust seasoning if needed, then serve.

Notes

For extra flavor, let the salad sit for 10 minutes before serving.
