Ingredients

Bell Peppers

  • 4 large bell peppers, any color
  • 2 cups cooked chicken breast, shredded
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 red bell pepper sliced thin
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced tomatoes, drained
  • 1/2 cup shredded cheese, optional
  • 2 tablespoons fresh cilantro, chopped

Instructions 

  • Preheat oven to 375°F. Slice tops off peppers, remove seeds, and bake for 10 minutes.
  • Cook onion and red bell pepper in olive oil until softened. Add chicken, spices, and tomatoes; cook briefly. Stir in cilantro.
  • Stuff partially baked peppers with chicken mixture. Top with cheese if desired.
  • Bake stuffed peppers for 20-25 minutes until tender and golden. Rest 5 minutes before serving.

Notes

For extra flavor, add a squeeze of lime before serving.
