cooked chicken breast, shredded

Instructions
Preheat oven to 375°F. Slice tops off peppers, remove seeds, and bake for 10 minutes.
Cook onion and red bell pepper in olive oil until softened. Add chicken, spices, and tomatoes; cook briefly. Stir in cilantro.
Stuff partially baked peppers with chicken mixture. Top with cheese if desired.
Bake stuffed peppers for 20-25 minutes until tender and golden. Rest 5 minutes before serving.
Notes
For extra flavor, add a squeeze of lime before serving.
