Ingredients

Pasta Salad Ingredients

  • 1 pound pasta (any shape)
  • 2 cups cooked corn kernels
  • 1 medium red bell pepper, diced
  • ½ medium red onion, finely chopped
  • 1 medium jalapeno pepper, seeded and minced
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ¼ cup freshly chopped cilantro
  • 1 medium lime, juice
  • 1 teaspoon chili powder
  • to taste salt and pepper

Instructions 

  • Cook pasta, drain, and set aside.
  • Whisk mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a bowl.
  • Combine pasta, corn, bell pepper, onion, and jalapeno in a bowl. Pour dressing and toss gently.
  • Add cilantro, toss again, and adjust seasoning.
  • Refrigerate for at least 30 minutes before serving.

Notes

For extra flavor, grill the corn before adding it to the salad.
