A refreshing and crunchy salad featuring strawberries, avocado, and a delightful homemade champagne vinaigrette.

Ingredients

Nuts

  • cup sliced or slivered almonds

Dressing

  • 3 tablespoons sugar

Greens

  • 10 ounces arugula greens
  • 8 ounces strawberries ((hulled and quartered or chopped))
  • 1 whole avocado ((chopped))
  • 2 ounces crumbled goat cheese
  • cup roasted salted pistachios ((chopped))

Dressing

  • 3 tablespoons champagne vinegar
  • ½ lemon juiced
  • 2 tablespoons honey
  • 1 teaspoon dijon mustard
  • 1 clove garlic ((freshly grated))
  • pinch kosher salt and pepper
  • ½ cup olive oil

Instructions 

  • Toast almonds with sugar in a skillet until caramelized, about 6-8 minutes. Cool and break apart.
  • Toss arugula with salt and pepper, then add strawberries, avocado, goat cheese, pistachios, and sugared almonds. Drizzle with dressing and serve.
  • For dressing, whisk vinegar, honey, lemon juice, dijon, garlic, salt, and pepper. Stream in olive oil while whisking.

Notes

Store leftover dressing in the fridge for up to one week.
