A fresh and flavorful salad combining grilled chicken, strawberries, and crunchy toppings, perfect for a light lunch or dinner.

Ingredients

Lettuce

  • 2 cups chopped romaine lettuce
  • 2 small boneless skinless chicken breasts
  • 1 cup fresh strawberries
  • 1 gala apple gala apple
  • 1/3 cup craisins (dried cranberries)
  • 1/2 cup shredded mozzarella cheese
  • 3 tablespoons crushed walnuts
  • to taste Olive oil, salt, and pepper (for seasoning and grilling)

Dressing

  • to taste creamy poppyseed or raspberry vinaigrette

Instructions 

  • Divide lettuce among two bowls and chill.
  • Season chicken with olive oil, salt, and pepper; grill until cooked through. Rest before slicing.
  • Slice strawberries and apple; add to bowls with lettuce.
  • Top with craisins, mozzarella, walnuts, and sliced chicken; drizzle with dressing.
