A delicious and healthy layered pudding combining fresh strawberries and creamy chia seeds, perfect for a quick breakfast or snack.

Ingredients

Fruits and Toppings

  • 16 ounces fresh strawberries, hulled and sliced
  • 1.5 tablespoons pure maple syrup (plus extra for taste)
  • 2 teaspoons freshly squeezed lemon juice

  • 2 cups unsweetened plain almond milk
  • 1.5 tablespoons pure maple syrup (or to taste)
  • 1 teaspoon vanilla extract
  • 0.5 cup chia seeds

Toppings

  • your favorite granola granola

Instructions 

  • Combine strawberries, maple syrup, lemon juice, and salt; let sit 30 minutes at room temperature.
  • Stir again, cover, and refrigerate overnight.
  • Whisk almond milk, maple syrup, vanilla, and chia seeds; rest 10 minutes, then whisk again. Refrigerate overnight.
  • Stir both mixtures in the morning, taste, and adjust sweetness if needed.
  • Layer chia pudding and strawberries in bowls, add toppings as desired.
