A fresh and vibrant pasta salad perfect for spring gatherings, combining crisp vegetables, herbs, and a tangy lemon dressing.
Ingredients
Pasta

rotini pasta

cup
cherry tomatoes, halved

medium
cucumber, diced
1
bell pepper
sliced (any color)

red onion
finely chopped
1/4
cup
fresh basil or parsley, chopped

extra virgin olive oil

lemon juice (freshly squeezed)
to taste
Salt & pepper

feta cheese or mozzarella balls (optional)
Instructions
Cook the pasta in salted boiling water until al dente, then drain and rinse with cold water.
Chop the vegetables and herbs, then combine with the cooled pasta in a large bowl.
Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently.
Sprinkle feta or mozzarella if using, then serve immediately or chill.
Notes
For extra flavor, add a pinch of red pepper flakes or more herbs.
