Instructions
Preheat oven to 450°F (232°C).
Season chicken breasts with salt and pepper, cut a slit to create a pocket.
Steam spinach until wilted, then squeeze out excess water. Mix with cream cheese, garlic, and 1/2 cup mozzarella.
Stuff the spinach mixture into chicken pockets, secure with toothpicks, sear in oil for 4-5 minutes per side.
Top with tomato slices and remaining mozzarella, then bake for 15 minutes until cooked through.
Notes
Use a meat thermometer to ensure chicken reaches 165°F (74°C).
