A delicious and healthy stuffed chicken breast recipe featuring spinach, cheese, and tomatoes, perfect for a quick dinner.

Ingredients

Protein

  • 4 oz Boneless skinless chicken breasts
  • 2 tsp Sea salt
  • 0.5 tsp Black pepper
  • 6 oz Fresh spinach (chopped)
  • 2 oz Cream cheese (softened)
  • 2 cloves Garlic (minced)
  • 1 cup Mozzarella cheese (shredded, divided)
  • 1 tbsp Olive oil
  • 1 medium Roma tomato (sliced thinly into 8 slices)

Instructions 

  • Preheat oven to 450°F (232°C).
  • Season chicken breasts with salt and pepper, cut a slit to create a pocket.
  • Steam spinach until wilted, then squeeze out excess water. Mix with cream cheese, garlic, and 1/2 cup mozzarella.
  • Stuff the spinach mixture into chicken pockets, secure with toothpicks, sear in oil for 4-5 minutes per side.
  • Top with tomato slices and remaining mozzarella, then bake for 15 minutes until cooked through.

Notes

Use a meat thermometer to ensure chicken reaches 165°F (74°C).
