Instructions
Heat olive oil and sauté garlic until fragrant.
Add crushed tomatoes and tomato paste; simmer with sugar, salt, and pepper.
Mix spinach, ricotta, Parmesan, and egg; season with salt and pepper.
Layer sauce and dollops of spinach mixture in a baking dish; top with remaining sauce and cheese.
Bake at 375°F (190°C) for 45 minutes; rest for 10 minutes before serving.
Notes
You can add fresh basil for extra flavor or sprinkle additional cheese on top before baking.
