A delicious and creamy pasta dish combining fresh spinach, ricotta, and a rich tomato sauce, perfect for a comforting meal.

Ingredients

Spinach and Cheese

  • 2 cups cooked spinach, squeezed dry
  • 15 oz ricotta cheese
  • 0.5 cups grated Parmesan cheese
  • 1 large egg
  • 4 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 1 tablespoon tomato paste
  • to taste olive oil olive oil
  • a pinch sugar sugar
  • to taste salt and pepper salt and pepper
  • optional fresh basil fresh basil (for sauce)
  • to taste additional cheese additional cheese for topping (such as mozzarella)

Instructions 

  • Heat olive oil and sauté garlic until fragrant.
  • Add crushed tomatoes and tomato paste; simmer with sugar, salt, and pepper.
  • Mix spinach, ricotta, Parmesan, and egg; season with salt and pepper.
  • Layer sauce and dollops of spinach mixture in a baking dish; top with remaining sauce and cheese.
  • Bake at 375°F (190°C) for 45 minutes; rest for 10 minutes before serving.

Notes

You can add fresh basil for extra flavor or sprinkle additional cheese on top before baking.
